Can you briefly introduce your company?
Elitaria is a family company owned by my family. My brother and I are the heart of the company. I am the buyer, and my brother Edoardo is the commercial director. The story comes from a long time, from my father's agency, and changed in 2007. Our company started to sell in the high-level horeca sector till 2020 with COVID. During Covid, we started to sell dry-aged meat in the whole of Italy initially to butchers and after the reopening period to steak houses too. Nowadays, Elitaria has been changing again. Lots of requests from outside Europe. Lots of requests from small wholesalers. New establishment will be ready in May 2026, so more availability and more stock.
What products do you specialize in?
Actually, we specialize in over 40/50 different breeds that come from all over Europe for Ribloins, fresh or dry aged. With the new establishment, we'll start with our deboning plant for carcasses or pistolas of specific animals.
Which markets do you currently supply?
Restaurants, steakhouse, butchers, wholesalers, foodservice companies.
What makes your product offering competitive?
The availability of origin and breeds.
How do you ensure quality and consistency?
With my brother's and my face. We offer our clients the opportunity to select directly in our dry-aged rooms what they want
What certifications or standards do you operate under?
Being a small company, I buy directly from the slaughterhouses.
What kind of partners are you looking to connect with on Meat Borsa?
Try to find some partners to develop my work in Europe who can find me some clients and maybe find a company that wants to invest in my work in Italy and sign a contract of exclusivity, or maybe find a solution to develop work from Europe to Italy for different companies.
