Boneless. Trimmed to approx. 1mm fat, without shoulder chap and shank meat. Deboned by cutting through the breast flip.
Bone in, defatted with false lean.
Boneless, without oyster and gristle. Cut from the fore-end opposite the rearmost point of the knuckle. Cut just in front of the tip of the oyster. Sheet ribbed. With max 4mm. fat. Cut max 25mm. from the dark muscle.
Rindless.
Bone in, rind on. With belly flank.
Chain and head on, fatless.
Narrow cut.
With breast bone.
