The four muscles (Topside, Knuckle, Silverside, Rump) are seam boned from a whole bone in leg by following the natural seams. The cap is to be removed from the Topside, Knuckle and Rump by following the seams. All four muscles to mechanically deskinned both sides (including the silverskin from the Silverside) to attain 100% VL. No knife slashes and remove any loose pieces, cartilage, bone and extraneous material
