Beef tenderloin, carefully trimmed and free from connective tissue. Due to its tenderness, it is considered one of the highest quality beef cuts. Since this muscle is less exercised, the meat is exceptionally fine-grained and tender. Available in 3/4 lbs. and 4/5 lbs. selections. Recommended use: Steaks, filet strips.
